Catering for a BBQ

Hi all,

We are looking at having a smallish gathering and was wondering if anyone has any catering experience.

We will have about 30 people coming for a casual bbq and afternoon drinks. What is appropriate levels of beer, wine, and meat/food to buy for this number of guests?

Dan Murphy's website has a alcohol calculator. But you need to make adjustments depending on the crowd and duration of the gathering.

For meat... we normally allow 250g of meat for male and 150g of meat for female, assuming there are ample sides / salads. If in doubt get more snags as backup - cheap and filling, keeps well in the fridge.

wow.. providing alcohol should be quite expensive for 30ppl. A v. rich friend of mine spent 10k on alco to cater for her 18th. But I think there were about 120ppl

Ha its not a party that big, just a few casual drinks. Providing its under $1k we dont really care.

8 slabs should be enough - 6.4 beers each. Plus some wont drink.

Yeh, my mates and i drink quite a bit when we get together so we were thinking six slabs, and i have a 22yo magnum of wine in the 'cellar' for all the wine drinkers.

Were thinking 2 -3 snags per person, plus some chicken skewers, plus some hamburger patties and salads for the food side of things.

As a side note, how long should one let a 22yo Imperial (6L) of red breathe (in its decanters) for before it is drank? Is overnight sufficent?

you can always pad out the booze as well - buy your estimated allocation of decent beers and nice bottles of wine, but find a cheaper brand of beer that has a good special going and get a couple of cases of that as well and a couple of the 'upmarket' casks to pad out the wine - that'll give you a backup to keep the hardcore boozers happy later on if/when you run out of decent stuff. And places like Dan Murphy's tend to be way cheaper than the average local bottlo so its worth heading to one of the discount places for supplies.

we have always made a mix of a white rum fruit punch to augment the beers. People who want to drink after the beers have run dry don't mind and it is a nice refresher for the others.
Add a bottle of white rum and vodka with 20 litres of fruit juice and you are good to go.

I also like making up either a gumbo or some savory meats to wrap in pocket bread or lettuce leaves for after mains snacks if it goes into the night.

The other may be as simple as jacket potatoes smeared in olive oil and wrapped in alfoil to throw in the coals if you have a fire.

If it is a bit more high brow you could get a few wheels of cheese and crackers to bring out after the main meal.

Ha! I think that would blow our $1k budget out of the water :D Would be worth it though ;)

At this stage we are thinking it will cost about $600 if the big bottle of wine we have has spoiled. Thats $10pp for drinks (either a 6pack or a bottle of wine each) and $10pp for food.

It really depends on the quality of the stripper...

And prawns... you are not serving prawns, Prawn?
 
Hope you'll also have some fruit juice, soft drinks, water available for those who don't want alcohol or decide they have had enough.
Have a large platter of salad stuff and add sliced ham, salami, melon balls, chorizo sausage etc.
Have fun.
 
Well i cook for that usually at least once a month for our luncheons.

Depends on the theme and budget but if its just meat then 3kgs of scotch filet 3-4kgs of continental sausages (pork/fennel etc..). A large pepperonata (mixed grilled vegetables on the plate). Plus salads, rice and other simple dishes.

That to me is a simple and very basic bbq but cheap and tasty.

All up $3-400 should cover your budget completely. If you want to get fancy then of course seafood is the next option with spaghetti vongole, lobster rolls, scallop mornay etc... the list goes on...............
