What happened to the good old roast chicken and three or four vegies? I find that most chefs are in a race to see who can use the most spices so that all you taste is the spice anyway. Forget dining out, it is overrated, overcharged and nowhere near as good as a decent homecooked meal. Invite your friends over and choose those that are good cooks so that the return invite is great. This way you may even find out the real taste of food. Give me a good cook over a modern chef anyday.
I remember being in a restaurant once after being travelling and eating out for 6 weeks. We were pondering over the menu for some time when the head waiter asked if he could help and suggested he could do something else not on the menu. I said how we had been eating out for so long I was looking for plain roast beef and vegs. "Done" said the waiter and in a short space of time out came a lovely roast meal. I asked how it was possible. The answer, "actually that is what I had prepared for our family tonight".

A good chef is good at cooking for many people.

A good cook is good at making food taste good.

This talk of best meals reminds me of what to me as a kid was the very worst meal: boiled corned beef where the potatoes, carrots and carrots were all cooked in the same pot, for the same amount of time! Have never eaten corned beef since. Yuk!

Re the roast pork, isn't the best part the crackling? A guilty pleasure is cooking just the crackling and munching through it with lots of salt and apple sauce.

after months of disappointment with the succulent bird i was fortunate to have a fine bird at the Bengal Tiger in Port Melbourne friday night,

Oh I am so with you there Julia, and usually it was served with parsley sauce Genuinely the most revolting dish ever.

I used to love crackling but now I cant stand the smell of pork. Must be my Jewish heritage coming to the fore I guess! Do I have any though?

yes spot on so-cynical,

i usually just enjoy the succulent bird with chutney and about 5 pieces of naan/garlic naan,

tikka pieces are quite nice as well but nothing better than seeing the succulent bird coming out to your table on a sizzling plate,
