Thanks for the responses, the hard thing I found to get my head around was that the most important part of it all was to position yourself to get "a piece of the action" and the actual price you quote mainly serves to get you to the front of the queue or at least near the front so that whatever happens, you're in!
First glance would make you think that if you bid $8 to buy in stox's scenario the amount would figure in the calculations as a sort of average. But it's really all about depth, not price.
As long as there are enough sellers in the $5 region, I suppose you can be pretty well assured that you won't really have to pay $8.
