Don't need to eat less, in fact it's harder to lose weight with a slow metabolism. Coffee is also ok (I can't live without it - it's one of my life's pleasures), just replace full cream with skim and go low on the sugar, maybe even replace with sweeteners.
Eat MORE, but healthily. Don't over-eat, but eat frequently. It's simple - I don't know why there are so many fad diets about. Simply replace white bread with wholemeal, full cream milk with skim (and in fact anything that has a low in fat/sugar alternative), eat three mains a day, have healthy snacks in between when feeling hungry (i.e. fruits, few nuts, no fat yoghurt, etc.), and drink lots of water - about 1-2L a day.
For breakfast, up to you, but ensure it's low in fat and sugars. Actually, it's probably not that important if you are active for most of the day. For lunch, just eat a salad roll (or something equivalent to a footlong Sub), that contains salad or vegies and some meat. For dinner, pretty much the same - low in fat and sugar, plenty of protein and some carbs - something like grilled chicken breast and steamed vegies or equivalent.
And, exercise... the above will keep the weight off and decrease your fat over time, but in conjunction with exercise will see it fall off. High-intensity cardio is good, but walking is just as effective at burning fat, but obviously you won't be as healthy as you would if sweating it out regularly.
Anyway, that's all there is to it... simple, and easy once you get into the habit.
